Tangy Red Cabbage & Onion Salad


This healthy simple salad makes a perfect side dish and is great served with grilled fish or burgers.

Time: 15mins

Serve: 4 people

Ingredients

2 cups – carrots, cut into thin sticks or grated
3 cups – red cabbage, finely shredded
1 cup – red onions, finely sliced
1 cup – cucumber, cut into thin sticks
handful mint leaves
handful coriander leaves
½ cup – toasted peanuts, roughly chopped

For the dressing
¼ – cup limes/ lemon juice
¼ – cup EVOO
1 – red chili, deseeded and finely chopped
1 – tbsp honey
To taste – black pepper

Directions

  • Add the carrots, cabbage, cucumber, and onions into a bowl. (Be creative and feel free to add any other veggies of your choice.)
  • Make the dressing by stirring the ingredients together.
  • Pour over the salad, tossing the vegetables in the dressing.
  • Add the herbs, toss again, then sprinkle the peanuts just before serving.
