Chia OAT Pudding with Strawberries


Perfect for breakfast high in antioxidants from berries, and chia seed. Chia seeds are packed with fiber, protein, antioxidants, omega-3 fatty acids, and various micronutrients like calcium and alpha-linolenic acid (ALA). Sunflower seeds, pumpkin seeds and nuts are rich in magnesium, iron, calcium, potassium and phosphorous. Oats are filled with manganese, copper,vitamin B1, zinc, magnesium, iron, calcium, potassium and phosphorous.

Ingredients

  • ¼ cup                Chia Seeds
  • 3 Tbs                  Oats
  • 1 cup                  Coconut milk
  • ½ cup                Water
  • ½ cup                Strawberries (berries of choice)
  • 3 Tbs                  Sunflower seeds
  • 2 Tbs                  Pumpkin seeds

Any nuts of choice to sprinkle over

Honey or any choice of sweetener to taste is optional.

Directions

  • In a saucer add chia seeds, oats, coconut milk, and water to cover the dry ingredient. Mix well.Turn the heat to medium-low and let it simmer.
  • Add ¼ cup of water or milk of choice if needed.
  • Serve the pudding in a bowl and feel free to add more water or milk of choice and sweetener to adjust the thickness of the pudding as you like. Top up with strawberries, sunflower seeds and pumpkin seeds and choice nuts before serving.
