Lemon Coconut Truffles

Ingredients

3 cups – shredded, unsweetened coconut (divided ¼ cup)
½ cup – cashews
¼ cup – honey
2 Tbs – coconut oil
1 – lemon zested, and juice

Directions

  • Add the shredded coconut and cashew to a food processor and blend it to become a paste.
  • Now add the rest of the ingredients and mix until it forms a dough ball.
  • Use your hands to roll the mixture into approximately 14-18 energy balls. If it is too sticky refrigerate for at least 20-30 minutes before rolling it into bite-size balls. You can use a small cookie scoop to help get them evenly sized.
  • You can as is or roll your balls in extra shredded coconut
