Brown Rice SALAD BOWL


Brown Rice Salad Bowl is a very hearty meal, full of flavor and fresh herbs can be paired with any choice of protein.

Time: 20 mins

Serve: 4 people

Ingredients

1 cup – cooked brown rice
1/3 cup – extra virgin olive oil
1 medium – onion, peeled and finely chopped
3 tbsp – tomato paste
½ tsp – cumin powder
½ tsp – red pepper flakes pepper to taste salt, to taste
1 – lemon, freshly squeezed
1 tbsp – pomegranate molasses (can be subbed with honey )
4 – lettuce leaves, chopped
2 sprigs – of scallion, finely chopped
2 sprigs – parsley, finely chopped
1 medium – tomato, diced

Directions

  • Heat the olive oil and saute the onions until it is translucent. Then add the tomato paste and saute for another 3 minutes. Add the spices and salt and turn off the heat.
  • Add the tomato paste & onion mixture, pomegranate molasses, and lemon juice to the brown rice. Mix them well.
  • Add the chopped greens and tomatoes to the brown rice, and fold them.
  • Transfer the serving plate and serve it immediately.
